Herb Marinaded Cornish Hen

 Herb marinaded cornish hen will collard greens and basmati rice

In a food processer blend fresh herbs (thyme, rosemary, oregano, tarragon, parsley, cilantro and basil) with garlic, shallot, sea salt , lemon juice and olive oil. Reserve some of the mixture for sauce.
Cut Cornish hen in half. Rub herb mixture under skin as well as on top and inside. Marinate for a min of 8 hours.
Fry hen skin side down in olive oil or grape seed oil until is slightly brown. Turn over hen and place in 450 degree oven for 30 min.
Sauce – Add about a teaspoon of herbs and ¼ cup chicken broth and ¼ cup white wine. Reduce mixture to desired thickness.
