Pistachio Crusted Rack of Lamb

1. Rinse and pat dry rack of lamb
2. Salt and pepper lamb
3. Sear and brown in olive oil
4. Mix Mustard Paste - Dijon mustard, minced shallots, garlic and cilantro into a paste
5. Smear mustard mixture over rack of lamb
6. In a blender or food processor mix Italian bread crumbs and pistachios
7. Pat bread crumbs over mustard.
8. Cook lamb at 450 degrees until done to your liking. Medium rare should be about 25 minutes depending on how thick the rack is.
